A great way to start off the morning or even a light snack throughout the day is with these divine poached eggs, avocado on toast and chilli flakes. Don’t forget to only buy organic if you can!

Ingredients
- 2 Fresh organic eggs
- 1 Good quality grain-free or sprouted bread and organic greens.
- 2 slices of The Health of Nature bread or CRU8 Paleo Bread/Ezquiel Sprouted Bread
- 1/2 Avocado
- 1 Handful of Rocket or baby spinach
- 1/2 Lemon
- 1 tsp Coconut oil (spread on toast)
- 2 tsp Olive oil
- 1 Pinch of Salt and Pepper
- 1 Sprinkle of Chilli flakes
Method
- Toast the bread and spread with coconut oil.
- Place half 1/2 an avocado sliced/mashed on top of one piece of toast.
- Poach 2 eggs for 5 minutes in water with a splash of vinegar to hold the shape. Whilst the eggs are cooking stream a portion of spinach/broccoli/asparagus.
- Place spinach/broccoli/asparagus on a bed of avocado.
- Drain the eggs and place on top of avocado and veg.
- Drizzle olive oil, pepper and salt and sprinkle with child seeds and/or lemon juice.
Optional side of steamed asparagus or broccoli
